There were so many great desserts that I couldn't fit all of the goodness on one page!

Poppy Seed Bread

Bread Ingredients
3 cups flour
2 1/2 cups sugar
1 1/2 tsp. salt
1 1/2 tsp. baking powder
3 eggs
1 1/2 cups milk
1 1/8 cups veg. oil
1 1/2 tsp. poppy seeds
1 1/2 tsp. vanilla
1 1/2 tsp. almond extract
1 1/2 tsp. butter flavoring
Mix all ingredients together and pour into lightly greased bread pans.  Bake at 350 for approximately 50-60 minutes.  Yield: 2 loaves.

Glaze Ingredients

3/4 cup sugar
1/4 cup orange juice
1/2 tsp. vanilla
1/2 tsp. almond extract
1/2 tsp. butter flavoring

Put the glaze on the bread while in the pan and still hot.  Enjoy!

Legendary Coffee Cake

1 pkg butter recipe yellow cake mix
1 cup sour cream
4 eggs
2/3 cup oil
2/3 cup brown sugar
2 tsp cinnamon
2 cups powdered sugar
¼ cup milk
2 tsp vanilla

 

In a large mixing bowl, blend together yellow cake mix, sour cream, eggs, and oil.  In a separate small bowl, blend brown sugar and cinnamon.  Pour half of the cake batter into a greased bundt or tube cake pan.  Sprinkle half of the brown sugar and cinnamon mixture on top of the batter, just covering the top.  Pour the rest of the batter on top to make a second layer, then top the whole cake with the remaining cinnamon sugar mixture.  Bake at 350 degrees F for approximately 45-50 minutes.   Meanwhile, blend together powdered sugar, milk, and vanilla to make the icing.  Drizzle warm cake with icing.

 

Finnish Pancakes

½ cup butter
1 cup sugar
1 cup flour
1 tsp baking powder
1 tsp asalt
4 eggs
2 cups milk

 

Preheat oven to 400 degrees F.  Place butter in a 9x13 baking dish and put in warm oven just long enough to melt the butter.  Remove the baking dish from the oven and set aside.  In a separate bowl, whisk together sugar, flour, baking powder, salt, and eggs.  Add milk.  Pour mixture over melted butter.  Bake for 18-20 minutes.  Let cool for 2-3 minutes.  Serve with cinnamon sugar, powdered sugar, or syrup.

*Note: This recipe is surprisingly filling

Homemade Oreo Cookies

Wafers:
1 1/4 c. flour
1/2 c. cocoa
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp salt
1 1/2 c. sugar
1 1/4 sticks of butter at room temp
1 large egg

Filling:
1/2 stick butter at room temp
1/4 c. veg. shortening
2 c. powdered sugar
2 tsp vanilla

For Wafers:
1. Mix four, cocoa, baking soda and powder, salt and sugar. While on low add butter and egg. Mix until it all blends together.
2. Take rounded tsp of batter and place on greased cookie sheet. With moistened hands, flatten then dough.
3. Bake for 9 min. at 375.

For Filling:
1. place butter and shortening in mixing bowl. Gradually beat in sugar and vanilla.

Peach-Pear Delight

1 16 oz. can sliced peaches
1 16 oz. can sliced pears
1/4 c. sugar
2 tsp lemon juice
1/8 tsp almond extract
3/4 c. flour
3/4 c. brown sugar
1/4 tsp. salt
1/3 c. butter

1. Arrange peaches and pears in greased 2 qt. baking dish.
2. Combine sugar, lemon juice and almond extract in a separate dish and drizzle over fruit.
3. Combine flour, brown sugar, and salt in a small mixing bowl. Cut in butter.
4. Sprinkle mixture over fruit.
5. Bake at 350 for 40-50 min, until fruit is tender.

Aunt Lola's Cherry Squares

1 c. shortening
2 c. sugar
4 eggs
1 tsp vanilla
3 c. flour
1 to 2 cans cherry pie filling

Glaze:
1 c. powdered sugar
1 1/2 tbl milk
1/2 tsp almond extract

1. Cream together shortening and sugar. Add eggs and beat well.
2. Add vanilla and flour. Beat for 2 min.
3. Place 1/2 batter in the bottom of a greased cookie sheet (11x15 with sides)
4. Cover with pie filling.
5. Dot the rest of the batter on the top. Bake at 350 for 30-40 min.
6. Let cool and cover with glaze. Cut into squares and enjoy!

Chocolate Frosting

1 stick of butter at room temperature
1/2 cup veg. shortening
3 1/2 cup powdered sugar
2 tbl. vanilla
2 1/2 tbl. cocoa

1. Mix butter and shortening until smooth and well blended.
2. Slowly stir in sugar and vanilla.
3. Add cocoa.

If you plan to use it immediately leave it out and it's really easy to spread. If you're going to need it later store it in Tupperware in the fridge!

Kate's Oatmeal Butterscotch Cookies

1 3/4 c. wheat flour
3/4 tsp baking soda
1/2 tsp salt
1 tbs cinnamon
1/2 nutmeg
1/2 tsp ground cloves
1/2 c. butter
1/2 c. unsweetened applesauce
1 tbs. molasses
1/3 c. brown sugar
1/4 c. white sugar
1/4 c. honey
2 eggs
2 c. oats
1/2 bag butterscotch chips
1 1/2 tsp vanilla

Combine butter, applesauce, molasses, sugar and honey until smooth. Add beaten eggs and vanilla. Combine dry ingredients (except for oats). After mixture is combined, add oats. Then stir in the chips. Bake in smallish balls at 325 for 10-12 min.

Peanut Butter Cookies

1 1/4 c. flour
1/4 tsp salt
1/2 tsp baking soda
1/2 c. butter
1/3 c. brown sugar
1/3 c. white sugar
1/3 c. honey
1 egg
1 tsp vanilla
1 c. peanut butter

Combine butter, sugar and honey. Add beaten eggs and vanilla. Add peanut butter and stir well. Add dry ingredients, stirring them together first. Stir everything together. Make 1 inch balls, and place on cookie sheet. Stick and Hershey kiss in the middle of each ball. Bake at 350 for 8-10 min.

Crepes

1 1/2 c. flour
1 tbs. sugar
1/2 tsp baking powder
1/2 tsp salt
2 c. milk
2 tbs. melted butter
1/2 tsp vanilla
2 eggs

Mix dry ingredients
Add wet ingredients, melted butter last
Combine well-should be nice and smooth
Cook on medium low heat in a crepe or frying pan

makes about 8-9 crepes, tastes great with Nutella, strawberries, orange juice concentrate and whipped cream.

Banana Nut Bread

1 c. butter
2. sugar
2 tsp vanilla
2 tsp lemon juice
4 eggs
2 c. mashed bananas
1 tsp salt
3 1/2 c. flour
2 tsp soda
2 tsp baking powder
1 c. sour cream
1 c. chopped nuts

Cream butter and sugar; add vanilla and lemon juice. Add eggs, one at a time, beating well after each addition. Add bananas. Sift salt, flour, soda and baking powder; add alternately with sour cream to banana mixture. Fold in nuts. Pour into two greased and floured loaf pans. Bake at 350 for 50-55 min.

Favorite Fruit Salad
